Formerly part of the Amsterdam Municipal Nursery and due for demolition, the structure was saved by Michelin-starred chef Gert Jan Hageman in 2001 and repurposed to become restaurant De Kas, a breathtaking beamed glasshouse serving fresh, seasonal menus. It’s located slightly out of downtown, but well worth the short trip especially during the summer, when sunlight streams into the cool and airy dining room all day long and into the evening; while winter lunches are bathed in a warm, golden glow.

Better yet, everything on the set menu is local, organic and vege-centric, with most ingredients coming from the on-site nursery or nearby farm. In clement weather, try for a table in the outdoor herb garden. A truly special, once-in-a-lifetime meal.
