Hungry for tips on where to eat? Our latest edition of Eat Like A Chef featuring British chef Reuben Davis takes your taste buds on a culinary trip around the world.
Currently in Bali as the inaugural chef in residence of the iconic, luxury beachfront hotel, The Legian Seminyak, Davis was most recently the Culinary Director of Singapore’s Mandala Club, one of Asia’s top private members’ clubs before starting his own culinary consultancy.
Davis has over 20 years of experience in the field, having worked with some of the industry’s biggest names including Jason Atherton (Maze, Pollen Street Social), Sat Bains, and Gaggan as part of the hugely successful Mandala Masters residencies he headed up in Singapore. We asked Davis to share some of his favourite eats around the world:
Singapore
Fiasco by Juice
“I love the relaxed vibe and unpretentious approach at Fiasco by Juice, a half-restaurant half-wine bar with delicious food and an amazing and super affordable wine list. It’s a breath of fresh air in the Singapore dining scene.”
What to order: The menu changes regularly, but definitely try the glazed pork collar with pineapple.

Brat
“The best of British produce cooked simply over fire – the food here is always delicious with a great wine list to match. I also love how the space has big windows that let in loads of natural light.”
What to order: The turbot is very famous, but the flatbread is phenomenal. And if there’s game on the menu, go for it.

Bali
Bar Vera
“Not only is the food here super tasty, they’ve also just started Cafe Vera for elevated brunch fare. Daytime is great but the space really comes alive at night with the open kitchen.”
What to order: Any of the cocktails and snacks, but definitely the pomme paillasson. They’re like mini hash brown chips that are very addictive.

“Christian [Recomio] is cooking up some remarkable food using the best British produce. The food is honest but also creative. It’s some of the best fine dining I’ve had in years.”
What to order: The tasting menu is the way to go here, so sit back and let them look after you.

Alta Trattoria
“This resto off a small back street in Fitzroy is bringing neighbourhood Italian fare to whole ‘nother level. The menu features regional Piemontese cuisine and the food and service is fantastic.”
What to order: The pastas are amazing but the whole menu is great. They also have a huge selection of amaros you can finish the meal with that are interesting and delicious.
