Pakta, Barcelona: Nikkei Nips by the elBulli Bros

They brought us elBulli, Tickets and 41º, and in the process placed their visionary molecular philosophy at the forefront of the world’s culinary evolution.

However, Albert and Ferran Adrià’s Pakta eschews their signature foam and vapours almost entirely, instead plating up relatively straightforward Japanese-Peruvian fusion… with just a hint of faff, claro.

The concise 32-seat space, lined with izakaya-style blond wood counters and weaving looms strung with colourful alpaca yarns, makes for an inviting and warm environment – which is a good start, seeing as you’re expected to sit in there for 2.5 hours.

The brothers, along with head chefs Kyoko Ii and Jorge Muñoz, present two tasting menus of 18 larger and 25 smaller courses for a fraction of the former Bulli’s prices, at 120 and 90 euros respectively. Although subject to seasonal change, past stars have included deep-fried baby whiting with kimchi and seaweed; seared salmon causa and grilled Iberian pork sushi; and anticuchera-marinated grilled octopus with olive mayonnaise and piquillo chimichurri. ¡Viva Adrià!
