Ron Gastrobar, Amsterdam: Casual Gastro

You’d think that for most aspiring chefs, helming a fine-diner that’s gained not one but two covetable Michelin stars would be the mark of success… but not so, for Dutch celebrity chef Ron Blaauw.

A local hero and the king of Amsterdam’s fine dining, Blaauw surprised the culinary world when he renounced his eponymous restaurant’s two-Mich-starred throne in order to renovate and reopen as Ron Gastrobar. He swapped his trademark molecular neo-Dutch haute cuisine for a relaxed and accessible offering, applying his deft hand to decidedly more casual small plates that pack big flavour.

Expect globally-influenced dishes like roasted sweetbreads with candied kidney; pan-fried langoustine with leek, onions and cream of chorizo; and wagyu burger with patatas bravas… Or if you’re feeling extra decadent, opt for the NYC-style, dry-aged and charcoal-grilled steak, served with Bearnaise, fries, and bone marrow.
